Veg Bengali Aloo Baingan
Potato peele & cut into wedges – 2 medium potatoes
Eggplant cut into wedges- 5 nos eggplant
Mustard oil- 1 tsp.
Green chilli slit- 2 no’s
Salt to taste
Zissto Bengali culinary paste- 5 tbsp.
- Heat oil in pan
- Add slit green chillies, when it splitters add potato wedges and fry for 3 minutes and take out of pan and keep aside.
- Now, add eggplant wedges and further fry for 2 minutes and take out and keep it aside.
- In the same pan, add Zissto Bengali culinary paste in the centre of the pan and mix well and stir fry.
- Now, add potatoes and eggplant wedges.
- Sprinkle some water and close the lid.
- Cook for about 4- minutes till the vegetables are done.
- Your aloo baingan is ready ,remove from pan and serve hot
