Veg Bengali Aloo Baingan

Ingredients

Potato peele & cut into wedges – 2 medium potatoes

Eggplant cut into wedges- 5 nos eggplant

Mustard oil- 1 tsp.

Green chilli slit- 2 no’s

Salt to taste

Zissto Bengali culinary paste- 5 tbsp.

 

Method

  1. Heat oil in pan
  2. Add slit green chillies, when it splitters add potato wedges and fry for 3 minutes and take out of pan and keep aside.
  3. Now, add eggplant wedges and further fry for 2 minutes and take out and keep it aside.
  4. In the same pan, add Zissto Bengali culinary paste in the centre of the pan and mix well and stir fry.
  5. Now, add potatoes and eggplant wedges.
  6. Sprinkle some water and close the lid.
  7. Cook for about 4- minutes till the vegetables are done.
  8. Your aloo baingan is ready ,remove from pan and serve hot
